Wholesome Grain Salad
Ingredients
Wholesome Grain Salad
- ½ butternut squash diced
- ½ cup cooked quinoa
- ½ cup cooked farro
- 3 cups arugula, roughly four handfuls
- ¼ cup pomegranate seeds
- ¼ cup pine nuts
- 3.5 oz goat cheese
Salad Dressing
- 1 tablespoon honey
- ½ tablespoon wholegrain mustard
- ½ tablespoon Dijon mustard
- 1 tablespoon lemon juice
Directions
- Directions:
- Preheat oven to 400F/200C.
- Toss the diced squash in ½ tablespoon of olive oil and some salt and pepper.
- Place on a lined oven tray and bake for 25-30 minutes, until the pumpkin is cooked and golden brown.
- Place arugula in a large salad bowl. Top with squash, grain, pomegranate seeds, goat cheese, and pine nuts.
- Toss to combine, adding extra feta and pomegranate on top for presentation.
- Add Salad Dressing
